Recipe Ingredients for Spaghetti Squash with Zucchini, Pine Nuts, Sage, and Romano

1 Squash, Winter, Spaghetti, halved lengthwise and seeded
1/4 cup toasted pine nuts
1/4 cup Parmesan cheese, grated
1 cup zucchini, julienned
2 tablespoons chopped fresh sage
1 tsp crushed red pepper
2 teaspoons butter, melted
1 salt and pepper to taste

Recipe Directions for Spaghetti Squash with Zucchini, Pine Nuts, Sage, and Romano

  1. Place squash flesh side down in the microwave for 12 - 15 minutes.

  2. Scrape flesh of squash from the rind using a fork and place in a bowl. Add the pine nuts, zucchini, cheese, sage, red pepper, butter, salt, and pepper; toss to combine. Serve immediately.
