This is a delicious fall vegetable dish. The original recipe calls for pine nuts (which I do not enjoy), you could substitute for a nut of your liking. This fine recipe comes from vegweb.com

Recipe Ingredients for Spaghetti Squash with Vegetable Medley

6 c Squash, Winter, Spaghetti
1 medium white onion, chopped/diced
3 cloves garlic, minced/crushed
1 red bell pepper
2 cups chickpeas
2 tomatoes, diced
2 cups fresh spinach
1 1/2 c pasta sauce
1 tablespoon oregano
1 tablespoon basil
1 tablespoon parsley
1 pinch garlic powder, onion salt, and celery salt, optional

Recipe Directions for Spaghetti Squash with Vegetable Medley

  1. Preheat oven to 350 F.

  2. Cut Spaghetti Squash lengthwise in half. Scoop out the seeds. Using a fork

  3. or something similar, pierce the skin of the squash all over. In a glass baking

  4. dish, bake halves facedown in 1/4 to 1/2 an inch of water for 1 hour, more or

  5. less depending on the squash and your oven.

  6. Saute onions, garlic, and colored pepper in some water until half-cooked

  7. (still crispy).

  8. Add garbanzo beans and tomatoes. Saute for another 2 minutes on medium.

  9. Lastly add spinach, pine nuts, pasta sauce, and seasonings; cook for a few

  10. more minutes.

  11. When the squash is cooked, use a fork to scrape the insides of the squash

  12. lengthwise to get the stringy flesh out. This can be used just like spaghetti.

  13. Serve on a plate with vegetable medley on top.

  14. Sprinkle some nutritional yeast flakes on top (optional).

  15. You will probably have leftover squash. I have heard that you can freeze it.

  16. Serves: 3-4

  17. Preparation time: 1 hour
