Fresh mozzarella or fresh grated Parmesan can be added for taste and protien

Recipe Ingredients for Spaghetti Squash with tomatoes and basil

1 lb grape tomatoes
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup basil, fresh, sliced
1/2 tsp salt
1/4 tsp black pepper
2 1/2 pounds spagetti squash

Recipe Directions for Spaghetti Squash with tomatoes and basil

  1. toss tomatoes, oil, garlic, basil, salt and pepper in a bowl, let stand about 10-15 minutes

  2. Cut squash in half, scoop out seeds. Place in microwave safe covered dish and cook on high for about 15 minutes (or oven roast for about 20)

  3. scrape squash from peel and mix with tomato basil mixture. About 1 cup per serving.
