Spaghetti squash is sauteed with a delicious sauce.

Recipe Ingredients for Spaghetti squash sautee

1 oz Squash, winter, spaghetti, cooked
1 serving Diced Tomatoes with Basil Garlic and Oregano
1 cup Beans, Great Northern, Mature Seeds
3 cup (1" cubes) Eggplant
2 cup slices Squash, Summer, Zucchini, Includes Skin
1 cup Onions
1 tbsp Vegetable Oil
1 cup pieces Mushrooms

Recipe Directions for Spaghetti squash sautee

  1. Bake the spaghetti sqaush for about an hour in a 350-400 degree oven. Turn the sqash over after about a half hour.

  2. Put the beans in a chopper and puree them until as smooth as you prefer.

  3. In a large pan, add oil. Sautee eggplant and onion together until they are cooked down and soft.

  4. Add mushrooms and zucchini. After a few minutes, add the tomatoes and bean puree.

  5. Cut spaghetti squash in half and take out seeds. Scrape the squash out with a fork and add to the pan. Let it absorb the sauce for a few minutes.

  6. This recipe does not have any cheese, but you could add a little bit of parmesan if you like. Enjoy!
