Sweet squash with really healthy sauce. Put whatever veggies you like & as much spice as tolerated. Quite spicy with cayenne pepper or red pepper flakes. Use a medium to large squash for this recipe, as I used a small one and only had 3 servings of squash (that's why I added it separately & is not included in the calories).

Recipe Ingredients for Spaghetti Squash with Sauce

340 grams veggie ground round
1 tablespoon extra virgin olive oil
1 small onion, chopped
3 cloves garlic, minced
2 cups tomatoes, chopped
1 small zucchini, sliced
5 mushrooms, sliced
1 tablespoon dried parsley flakes
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
2 tablespoons white wine (red preferred)

Recipe Directions for Spaghetti Squash with Sauce

  1. In a saucepan, heat oil & add onion & garlic. Saute until cooked, 3-5 minutes.

  2. Add tomatoes, wine, and ground round. Cook about 15 minutes in a boil.

  3. Add spices and cook additional 5 minutes.
