Quick and easy grilled chicken, veggie, and spaghetti squash salad.

Recipe Ingredients for Spaghetti Squash Salad

4 oz spaghetti squash (about one quarter of the whole squash)
50 g diced onion
75 g sliced tomato
50 g diced broccoli
50 g sliced mushroom
4 oz boneless, skinless chicken
1 extra virgin olive oil spray

Recipe Directions for Spaghetti Squash Salad

  1. Prepare spaghetti squash as directed; I cut it in half, scraped the seeds, and microwaved one half for eight minutes.

  2. Saute the rest of the veggies in a light EVOO spray on the stove.

  3. Grill and dice the chicken.

  4. Mix and serve!
