Recipe Ingredients for Spaghetti squash with roasted garlic and herbs

3 lb spaghetti squash
4 cloves garlic, unpeeled
2 T extra-virgin olive oil
2 T basil, tarragon and chives, fresh chopped
2 T green onions, chopped
1/2 t salt
1/8 t pepper

Recipe Directions for Spaghetti squash with roasted garlic and herbs

  1. Prepare spaghetti squash according to label directions.

  2. Put unpeeled garlic cloves into small cast-iorn skillet or on a griddle; cook, turning often, over medium heat until the peels are golden and the garlic is tender, 10 to 15 minutes. Cool; peel. Chop finely.

  3. Remove the seeds from the squash. Pull the flesh into strands with a fork into a serving bowl. Stir in the garlic, oil, herbs, green onions, salt and pepper. Toss with two big forks. Serve hot or at room temperature.
