A delicious side dish with generous serving size. If you like you can boil the seeds for about 10 minutes in boiling salty water, then bake them at 375 for about 20 minutes. Yummy bonus treat.

Recipe Ingredients for Spaghetti Squash

6 c spaghetti squash
1 onion
1 red bell pepper
1 tsp olive oil
1/4 tsp cinnamon
1/2 tsp garlic powder
1/4 tsp salt
1/4 c rice vinegar
1 tbsp sugar

Recipe Directions for Spaghetti Squash

  1. Cut a medium/large spaghetti squash in half lengthwise, remove seeds and pulp and bake at 375-400 degrees until tender (about 45 minutes, face down)

  2. Remove the squash strands with a fork.

  3. While the squash is baking, dice the onion and pepper and saute until soft.

  4. Add the vinegar and seasonings.

  5. Remove from heat.

  6. Stir in the squash and stir. Briefly re-heat to serve.

  7. NOTE: use Splenda to add more sweetness, if desired, without adding calories.
