tasty as a side dish, the cheese adds just the right flavor to it. It is low in fat and calories, very filling.

Recipe Ingredients for spaghetti squash

6 cups spaghetti squash
12 tablespoons shredded parmesan cheese
1/2 cup chicken broth
1 tablespoon basil
1 small yellow onion
2 tablespoons minced garlic
4 roma tomatoes

Recipe Directions for spaghetti squash

  1. in a skillet, pour in chicken broth, and then sautee the onion (chopped) garlic, basil, until onions tender. dice tomatoes, then add, stir just until they are warm.

  2. Cut squash in half, and scoop out seeds. pepper lightly the inside, cover with plastic. Cook each half seperate in a microwave oven for 10 minutes. Insides should be tender and stringy.

  3. Scoop out insides into a dish, mix in onion mixture, add cheese, and mix. each serving aprox. 1 cup.
