Delicious and light, with not as many grams of fat or calories as CC would have you believe. A non fat feta and low calorie marinara sauce still make this dish very tasty.

Recipe Ingredients for Spaghetti Squash Primivera

1 squash, winter, spaghetti
1 cup Feta Cheese, fat free
1 onion, diced
3 cloves garlic
4 cups spinach, fresh
1 tbsp. extra virgin olive oil
2 cups tomato sauce

Recipe Directions for Spaghetti Squash Primivera

  1. Halve squash length wise; scoop out seeds. Place, cut side down in a baking dish. With a fork, prick the skin all over. Bake for 30-40 minutes at 350 degrees or until tender.

  2. Heat oil in a large skillet and stir in onions and garlic for about 2 min. Add in mushrooms. Continue cooking about 5 min.

  3. When squash is done, let cool slightly, then separate into strands with a fork.

  4. Add spinach to stove top veggies and let cook down slightly.

  5. Then add squash, tomato sauce (Store bought marinara) and feta cheese.

  6. Stir together, then enjoy.
