Spaghetti Squash with Roasted Cherry Tomatoes and Broccolini!

Recipe Ingredients for Spaghetti Squash Primaverra

1 cup Squash, Winter, Spaghetti
1 cup Organic Cherry Tomatoes
1 clove Garlic
7 pieces Broccolini
1 serving Cooking Spray Canola Oil

Recipe Directions for Spaghetti Squash Primaverra

  1. 1. Preheat oven to 400 degrees fahrenheit.

  2. 2. Cut a spaghetti squash in half, and spoon out the seeds.

  3. 3. Salt and pepper each spaghetti squash half.

  4. 4. Half a cup of cherry tomatoes and wash a bunch of broccolini, and put them side by side on a pan.

  5. 5. Spray the tomatoes and broccolini with an oil spray or lightly drizzle with olive oil.

  6. 5. Sprinkle the tomatoes and broccolini with red pepper flakes, pepper, and fresh garlic to your own taste.

  7. 6. Put spaghetti squash in the middle oven rack.

  8. 7. Bake for 50 to 60 minutes

  9. 9. When there are 15 minutes left, put in pan with broccolini and tomatoes.

  10. 8. After taking both pan of tomatoes and broccolini and the spaghetti squash out, take and fork and "spaghetti" the squash by scraping the squash with the fork prongs.

  11. 7. After putting the spaghetti squash in a bowl, top it with the tomatoes and broccolini, if desired you could smush the tomatoes with a fork to make it more sauce like.

  12. 8. ENJOY!
