Recipe Ingredients for Spaghetti Squash with olives, feta and basil

10 cups Spaghetti Squash
2 cloves of garlic
1/4 cup kalamata olives
1/4 cup feta cheese
1/4 cup basil leaves
1/4 cup tomatoes
2 oz olive oil

Recipe Directions for Spaghetti Squash with olives, feta and basil

  1. preheat the oven to 350-- cut squash in half lengthwise--scrape out the seeds and discard them

  2. evenly divide garlic and basil leaves into each half

  3. drizzel the oil over squash halves and wrap each half sepereatly in aluminum foil

  4. put wrapped squash on a sheet pan flat side down

  5. bake for 45 minutes

  6. remove aquash and remove garlic and herb and drain liquid

  7. use a fork to scrape the inside into long thin 'noodles'

  8. add olives, feta, basil and a few drops of lemon juice if desired
