Spaghetti Squash with ground-turkey tomato sauce from New Rules of Lifting for Women

Recipe Ingredients for Spaghetti Squash with Ground-turkey tomato sauce

1 lb spaghetti squash
2 tsp extra virgin olive oil
1/2 white onion, chopped
1 lb lean ground turkey
2 cloves garlic, minced
14 oz diced tomatoes, no salt added
1 zucchini, diced
1 tbsp oregano
2 tbsp fresh parsley
1 salt and pepper, to taste

Recipe Directions for Spaghetti Squash with Ground-turkey tomato sauce

  1. To cook in the microwave: Cut squash in half, lenthwise,. Scoop out seeds. Microwave on high 12 to 16 minutes, with the cut side up. No need to cover/ Using, a fork, separate squash into strands, placing strands into a large bowl.

  2. Heat oil in saucepan. Add onion and stir until softened. Add ground turkey and cook, breaking up the meat into crumbles with a wooden sppon, until meant is no longer pink. Add garlic and cook 2 more minutes. Add tomatoes- including the juices in the can.

  3. Bring to a simmer and stir in the zucchini, then the herbs. SImmer, uncovered, about 10 minutes, until sauce has thickened. Add salt and pepper to taste.

  4. Diviide squash and sauce into equal portions. Place a portion of the squash on your plate, then top with a portion of the sauce. Sprinkle with parmesan cheese.
