Recipe Ingredients for Spaghetti Squash w/ Garden Veggies

3 cup spaghetti squash (1 3-pound squash)
6 servings freshly grated Parmesan cheese (3/4 cup)
1 second vegetable cooking spray
2 tsp olive oil
1 cup carrot, diagonally sliced
1/2 cup celery, diagonally sliced
1 cup cabbage, preshredded
1 small zucchini, cut into thin strips
16 oz kidney beans, rinsed and drained (1 can)
1 1/5 cups whole tomatoes (no salt added), drained and chopped (1 can)
1/3 cup dry white wine
1 tsp dried thyme
1 tsp dried parsley flakes
1 tsp garlic powder
1/8 tsp pepper

Recipe Directions for Spaghetti Squash w/ Garden Veggies

  1. Cut squash in half lengthwise; remove and discard seeds. Place squash, cut side down, in a Dutch oven; add water to depth of 2 inches. Bring to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until tender. Drain.

  2. Using a fork, remove 3 cups spaghetti-like strands from squash; reserve remaining squash for another use. Discard squash shells. Combine strands and cheese; toss. Set aside; keep warm.

  3. Coat a nonstick skillet with cooking spray; add oil. Place over medium heat until hot. Add carrot and celery; saute 5 minutes. Add cabbage and zucchini; saute 5 minutes. Add beans and remaining 6 ingredients. Cook over medium heat 5 minutes, stirring often.

  4. Place 1/2 cup squash mixture on each plate. Top evenly with vegetables. Yield: 6 servings.
