Use one spaghetti squash instead of yellow squash.

Recipe Ingredients for Spaghetti Squash Florentine

8 c yellow squash
1 c. lowfat cottage cheese
10 oz. spinach
2 eggs
1 t. Italian seasoning
1/2 tsp salt
1/2 c Parmesan cheese
1 c mozzarella cheese
2 c marinara sauce

Recipe Directions for Spaghetti Squash Florentine

Cook squash. Mix marinara and red sauce. Mix remaining. Layer in pan. Bake 30 min 375 degrees.
