Recipe Ingredients for Spaghetti Squash with Edamame Cilantro Pesto

9 cups spaghetti squash
1 Cooking Spray
1/2 tsp salt, divided
1 1/4 cup chopped fresh cilantro
1 cup chicken broth
1 tbsp extra virgin olive oil
1/4 tsp freshly ground black pepper
3 cloves garlic, minced
1 lb edamame, shelled thawed
1/4 cup grated parmesan cheese (1 oz)

Recipe Directions for Spaghetti Squash with Edamame Cilantro Pesto

  1. Preheat oven to 350

  2. Cut each squash (2) in half, discard seeds

  3. Place squash cut sides down on a baking sheet coated with cooking spray.

  4. Bake at 350 for 1 hour or until tender.

  5. Cool slightly

  6. Scrape inside of squash with fork to remove and measure 9 cups.

  7. Place in a bowl and toss with 1/4 tsp salt.

  8. Cover and keep warm

  9. Place cilantro, broth, oil pepper, remaining 1/4 tsp salt, garlic and edamame in a food processor, pulse until coarsely chopped.

  10. Serve over squash, sprinkle with cheese.

  11. Serving = 1 1/2 cups squash, 1/2 cup pesto, 2 tsp cheese
