Dr up from a mock Coconut pie recipe, you could add this to a pie crust and add in a couple tabelspoons of butter.

Recipe Ingredients for Spaghetti Squash Dessert

1/2 cup white sugar
1/2 cup Splenda
5 egg whites
1 teaspoon vanilla extract
3 cups spaghetti squash
1 pinch ground nutmeg (optional)
1 pinch ground cinnamon (optional)

Recipe Directions for Spaghetti Squash Dessert

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Beat the sugar, Splenda and eggs together in a mixing bowl until light and frothy.

  3. Beat in the butter(If using) and vanilla until well blended. Stir in the spaghetti squash. Pour the mixture into the prebaked pie shell. If desired. Then dust the top with nutmeg and cinnamon.

  4. Bake the pie in preheated oven until a knife inserted in the center comes out clean, 40 to 45 minutes. Cool on a rack before serving. Garnish with whipped cream, if desired.
