Recipe Ingredients for spaghetti squash crust pizza

3 cups cooked spaghetti squash
2 large eggs, beaten
1 cups shredded mozzarella cheese
4 oz no salt added crushed tomatoes
1 clove garlic, minced
2 tbsp red onion
1/4 cup sliced black olives
1 teaspoon dried oregano
1 teaspoon dried basil

Recipe Directions for spaghetti squash crust pizza

  1. Preheat oven to 400 F.

  2. Squeeze the excess moisture out of the cooked spaghetti squash with paper towels. Mix the squash, eggs and 1/2 cup mozzarella together and press into the bottom of a pie pan. Bake for about 10 minutes.

  3. Crushed Tomato Sauce:

  4. Pour the crushed tomatoes into a small nonreactive metal or glass bowl. Add the garlic and season with salt and pepper. Drain the excess liquid from the tomatoes and discard.

  5. Remove the pan from the oven and spread the tomato sauce, vegetables or other pizza toppings and the remaining cheeses over the crust. Sprinkle with oregano and basil and drizzle the olive oil over the top. Bake for 25 minutes or until cheese is lightly browned.
