Recipe Ingredients for Spaghetti squash cheesy casserole

2 cups spaghetti squash
1/2 tablespoon butter
1 tablespoon flour
1 cup skim milk
2 tablespoons parmesan cheese
1 clove garlic
2 tsp salt
1/2 cups fat free ricotta cheese
1 egg
3/4 cups parmesan cheese
1 tablespoon italian seasoning
8 ounces Mozzarella Fat Free

Recipe Directions for Spaghetti squash cheesy casserole

  1. Cut squash in 1/2 clean out seeds and place in a shallow microwavable dish with about 1/4 cup of water and cook for 12-15 minutes on high.

  2. While cooking make white sauce by melting butter, mince garlic add, add salt, then add flour, cook slightly.

  3. Add milk stir constantly till thick remove from heat and add 2 tablespoon of the parmesan cheese.

  4. In a separate bowl combine ricotta, egg, and remaining parmesan.

  5. Once squash is ready and easy to handle remove from skin in strings (1 - 1/2 of a squash is usually all you need) and place in a pie plate or small baking dish. Add white sauce and 1/2 of the ricotta mixture mix and pat down lightly.

  6. Add small spoonfuls of the remaining ricotta all around the top of casserole, then sprinkle the mozzarela over the top.

  7. bake at 350 till heated through and cheese is lightly browned. about 20-30 minutes.
