Recipe Ingredients for Spaghetti Squash Casserole

1 cup, chopped Onions
6 cup Squash, Winter, Spaghetti
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
8 oz Mushrooms
2 clove Garlic
1/2 tsp Spices Oregano Leaves
1 dash Salt, Table
3 dash Pepper, Black
1 cup Whole Milk Ricotta Cheese
1 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese
0.25 cup Parsley
1 tsp, leaves Basil, Dried
0.13 tsp Thyme, Fresh
1 cup Bread Crumbs Plain
0.5 cup Parmesan, Grated Cheese

Recipe Directions for Spaghetti Squash Casserole

Cut a 7? or so spaghetti squash in half lengthwise and bake face down on a buttered cookie pan in a 375 degree oven until soft, about 30 minutes. Cool until you can handle it. At the same time sauté the chopped onions, minced garlic, sliced mushrooms, spices until the onions are translucent. Add the chopped tomatoes and continue to sauté until most of the liquid has evaporated. In a big bowl add the sauted ingredients to the bread crumbs, ricotta cheese and mozzarella cheese. Scrap out the spaghetti squash and add to the mixture. Add salt and pepper to taste. Put the mixture in a buttered 2 quart casserole pan, top with the parmesan cheese and bake at 375 degrees for about 40 minutes. Serves 4-6.
