Use 1 1/2 to 2 lb. squash. Use reduced fat cheese to reduce calories.

Recipe Ingredients for Spaghetti Squash Casserole

2 lbs. spaghetti squash (small)
1/2 c. water
1 lb. ground beef
1/2 red pepper, sweet, chopped
1 clove garlic, minced
1 c. tomatoes, diced, undrained
1/2 t. oregano, dried
1/4 t. salt
1/8 t. pepper
1 cup mozzarella cheese, shredded (or cheddar)
1 T. parsley, fresh, chopped

Recipe Directions for Spaghetti Squash Casserole

  1. Cut squash in half lengthwise and scoop out seeds.

  2. Place with cut side down in a baking dish and add water.

  3. Cover and bake at 375 degrees for 20-30 minutes or until it is easily pierced with a fork.

  4. When cool enough to handle, scoop out squash, separating the strands with a fork.

  5. In a skillet, cook beef, onion, red pepper and garlic over medium heat until meat is no longer pink and the vegetables are tender.

  6. Drain.

  7. Add tomatoes, oregano, salt, pepper, and squash.

  8. Cook and stir for 1/2 minute or until liquid is absorbed.

  9. Transfer to an ungreased 1 1/2 quart baking dish.

  10. Bake uncovered at 350 degrees for 25 minutes.

  11. Sprinkle with cheese and parsley.

  12. Let stand for a few minutes.
