Recipe Ingredients for Spaghetti Squash Casserole

2 pounds spaghetti squash
1 vegetable oil spray
1/4 tsp salt
1/4 tsp pepper
15 ounce kidney beans
15 oz stewed tomatoes
1 cup frozen mixed vegetables
4 oz ground turkey
1/4 cup mozzarella cheese

Recipe Directions for Spaghetti Squash Casserole

  1. Preheat oven to 350F

  2. Prick squash with a fork, and put on a baking dish. Bake for 1 hour, 20 minutes or put in a microwave on high for 12-14 minutes. Let cool for at least 30 minutes

  3. Lightly spray a 9-inch round cake pan with oil spray. Cut squash in half lengthwise and remove seeds. Use a fork to scrape the squash strands from the shell into the cake pan.

  4. Sprinkle squash with salt and pepper, if desired.

  5. Top with kidney beans, tomatoes, mixed vegetables, and turkey. Cover pan and bake for 30-40 minutes, until the mixture is warmed through.

  6. Uncover and sprinkle with cheese. Bake uncovered for 5 minutes more, until the cheese is melted.
