Recipe Ingredients for Spaghetti Squash Casserole

4 oz Greek, Non-Fat, Plain Yogurt
24 oz Squash, winter, spaghetti, cooked
0.5 cup, shredded Cheddar Cheese
2 small Onions
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Broccoli

Recipe Directions for Spaghetti Squash Casserole

  1. Cut spaghetti squash in half, then steam in microwave 10-12 minutes. In skillet, saute onions, peppers and broccoli.

  2. Scrape out the cooked spaghetti squash (get rid of some of the moisture first) into the mix, then add the greek yogurt and the cheese, then transfer to a casserole dish. Put a little more cheese on top, then bake at 375 degrees for 15-20 minutes until golden brown and bubbly on top.
