A delicious and low-calorie alternative to fettuccine alfredo

Recipe Ingredients for Spaghetti Squash Alfredo

4 cups Spaghetti Squash
1 tbsp Butter
1/4 yellow onion
3 cloves Garlic
1 1/2 cups zucchini
4 tbsp Alfredo Sauce

Recipe Directions for Spaghetti Squash Alfredo

  1. Cut spaghetti squash in half. Remove all seeds.

  2. Cook each half in the microwave for about 10 minutes each.

  3. When squash is tender, use a fork and rake down the fleshy part of the squash. It will break into spaghetti-like strands.

  4. Melt butter in a frying pan. Add diced onion and minced garlic. Sautee until transparent.

  5. Add zucchini. Cook until tender.

  6. Add alfredo sauce to pan. Mix to heat.

  7. Pour mixture over spaghetti squash. Add salt and pepper to taste. Mix to combine.
