Use zucchini and carrots and mushrooms or whatever vegetables seem appropriate.

Recipe Ingredients for Spaghetti with sausage and vegetables in olive oil

2 turkey sausage links
8 oz spaghetti
3 T olive oil
1/2 t Italian seasoning
2 cloves garlic
2 small zucchini
1 carrot

Recipe Directions for Spaghetti with sausage and vegetables in olive oil

  1. Cook carrot in water, drain and set aside.

  2. Saute zucchini in small amount of olive oil, set aside.

  3. Brown sausage links, without skin, in olive oil, add seasoning and garlic.

  4. When sausage is done, add vegetables and rest of olive oil.

  5. Serve over cooked spaghetti.
