A good way to use all those garden veggies. Good flavorful sauce, but takes a long time to make.

Recipe Ingredients for Spaghetti Sauce, without meat

30 pounds tomatoes
1 cup chopped onions
5 cloves garlic, minced
1 cup chopped celery
1 cup green peppers, chopped
1 pound fresh mushrooms, sliced
4 1/2 tsp salt
2 tbsp oregano
4 tbsp minced parsley
2 tsp black pepper
1/4 cup brown sugar
2 tbsp olive oil

Recipe Directions for Spaghetti Sauce, without meat

  1. Wash tomatoes and dip in boiling water for 30-60 seconds or until skins split. Dip in cold water and slip skins off. Remove cores and quarter tomatoes. Boil 20 minutes, uncovered in large saucepan. Put through food mill and sieve. Saute onions, garlic, celery, peppers and mushrooms in oil until tender. Combine sauteed vegetables and tomatoes and add remainder of spice, salt and sugar. Bring to a boil. Simmer, uncovered until thick enough for serving. (This could take several hours). At this time, the initial volume will have been reduced by nearly one-half. Adjust lids. While the sauce is still hot (hot pack), process in a pressure canner. Makes 7 quarts. Process quarts for 25 minutes at 13 pounds pressure for Wasatch Front altitude (4,000-6,000 ft.). For pints, process 20 minutes at 13 pounds pressure.
