Spaghetti (Marinara) Sauce made with home-canned tomatoes and fresh vegetables.

Recipe Ingredients for Spaghetti Sauce with Vegetables and Mushrooms (avalee)

16 cups tomatos, canned crushed
6 celery stalks
2 onions
2 bell peppers
1 lb mushrooms
2 cups tomato sauce
8 cloves garlic, minced
1/2 tbsp garlic powder
1 tbsp Italian Seasoning
1/2 tbsp onion powder
1 tsp. pepper
2 tsp. salt

Recipe Directions for Spaghetti Sauce with Vegetables and Mushrooms (avalee)

  1. Dice celery, onions, bell peppers and mushrooms. Mince garlic.

  2. Add diced vegetables and minced garlic to a large saucepan or skillet. Add 1 Tbsp. water, cover, and cook over very low heat until vegetables are softened. Stir often so they don't burn.

  3. Add the softened vegetables, and 4 quarts of canned tomatoes and all seasonings to a 5 quart crock pot.

  4. Set crock pot on high and cook for 2 hours.

  5. Turn crock pot to low and continue to cook with the lid slightly ajar for steam to escape.

  6. Cook on low for another 4+ hours, or until the sauce has thickened.

  7. Add 2 - oz cans tomato sauce and continue to cook for another hour.

  8. Refrigerate or freeze leftover sauce.
