Yummy, healthy spaghetti sauce. My Mom's recipe with my own little tweaks here and there...

Recipe Ingredients for Spaghetti Sauce

6 kg tomatoes
5 onions
10 stalks celery
3 large carrots
6 bell peppers
5 2 bay leaves
20 g fresh parsley
1 tbsp basil
1 tbsp oregano
1 tbsp minced garlic
1 tsp salt
2 tsp sugar
1 tbsp italiano seasoning
1/2 tsp pepper
2 tsp crushed red pepper

Recipe Directions for Spaghetti Sauce

  1. Wash and peel tomatoes (put in boiling water, then an ice bath to make it an easy job)

  2. Cook tomatoes until they become soft and mushy.

  3. Put through food mill or strainer to remove seeds.

  4. Heat to a boiling and add other veggies (don't need to be chopped, just cleaned and cut into large pieces)

  5. Cook until veggies are soft.

  6. Put through blender in batches. Carefully. Don't get sprayed with boiling sauce like I did.

  7. Return to pot and add seasoning.

  8. Boil with lid off to thicken.

  9. Can in jars. Process time is 40 minutes for quarts
