Spaghetti Sauce chock full of veggies

Recipe Ingredients for Spaghetti Sauce - chicken or turkey

1/8 cup olive oil
1 onion
2 cloves garlic or the more the merrier...
2 carrots
3 celery stalks
1 zucchini
1 yellow squash
8 ounce mushrooms
1 lb ground chicken
68 ounces Pasta Sauce
1/2 cup red wine (optional)
1 tbsp honey (optional)

Recipe Directions for Spaghetti Sauce - chicken or turkey

  1. Use a food processor to finely chop veggies if you want your 'picky veggie hating kids" to gobble up!

  2. I also add finely chopped left over veggies like broccoli or cauliflower...I know it's sneaky, but it works.

  3. Brown chopped onions in olive oil, add garlic cook til soft.

  4. Add remaining veggies and cook until moisture is released and reduced. Add ground chicken, turkey or beef and brown, if serving to kids be sure to smash it all up to a similar consistency. Now that my son is older he enjoys sliced mushrooms in his sauce too...so I add another pkg or 2 of sliced mushrooms. I say, the more veggies the better!

  5. Add Spaghetti sauce (I use Prego, the huge Costco size - I like lots of sauce for left overs, on top parmesan chicken, in lasagna and over my veggies - and it freezes well too.)

  6. Add wine and honey (taste your sauce first Prego already adds alot of sugars) both are optional.

  7. Simmer until heated through. For a more flavorful sauce simmer until sauce is reduced and thick with a deeper red color. I often start mine in the morning and leave it in the slow cooker all day.

  8. Serve over pasta or veggies (my husband likes it over cauliflower and I like mine over spaghetti squash...), sprinkle with shredded or grated parmesan.
