Vegetarian friendly, very quick, and a great way to make spaghetti even in the winter, without sacrificing flavor. You'll have dinner on the table in less than half an hour, so this is great for weeknights. The sauce takes little more effort than the stuff in the bottle, and tastes WAY better. I've quoted this for 6 servings, but it's more like 8 for our house.

Recipe Ingredients for Spaghetti

15 oz Diced Tomatoes
28 oz Crushed Tomatoes
1 cup leaves, whole Basil, Fresh
1/2 tbsp Oregano, Ground
1 1/2 tsp Italian Seasoning
1/4 tsp Sea Salt
1/2 tsp Pepper, Black
16 oz Spaghetti
4 oz Parmesan 100% Grated
1 tbsp Olive Oil

Recipe Directions for Spaghetti

  1. Boil water for pasta and prepare according to package directions

  2. Meanwhile, heat Olive Oil over medium heat until just before smoking.

  3. Add Oregano, Italian Seasoning, and Pepper; saute until seasonings bloom and are fragrant (they will darken a bit)

  4. Add Diced and Crushed Tomatoes, stir in salt to taste.

  5. Simmer 10-12 mins, stir in basil, coarsely chopped.

  6. Simmer another 3-5 minutes, then remove from heat.

  7. Drain pasta, combine with sauce

  8. Top with Parmesan (optional) and serve.
