Spaghetti Putanesca Recipe

Recipe Ingredients for Spaghetti Putanesca

1 T Extra Virgin Olive Oil
4 T Minced Garlic
6 oz. Sliced Black Olives
3 T Capers
1/2 t Red Pepper Flakes
2 oz. Anchovies
15 oz. Chopped Tomatoes (Italian Style)
16 oz. Whole Wheat Spaghetti
1 T Salt
4 T Parsley
4 T Grated Parmesan

Recipe Directions for Spaghetti Putanesca

  1. Saute garlic, black olives, capers, pepper flakes (if you use them, I don't) and anchovies in the olive oil. Turn to med low and let cook until anchovies have pretty much disintegrated (about 5 mins). Add the can of tomatoes and simmer about 20 mins.

  2. While those ingredients are simmering, cook spaghetti adding the salt to water (normally I don't do this but for this recipe, I recommend it) and drain

  3. When mixture is done simmering, add parsley and mix in.

  4. Mix drained spaghetti and sauce together and serve sprinkled with parmesan
