A delicious and easy dinner. The original recipe notes 4-6 servings but we had a ton left over. Definitely a good meal for gatherings with family and friends.

Recipe Ingredients for Spaghetti with Olive & Pine Nut Tomato Sauce

1/4 cup pine nuts, toasted
1/4 cup extra virgin olive oil
4 cloves garlic, minced
1/2 tsp crushed red pepper
28 oz can tomatoes, crushed
1 cup kalamata olives, pitted and coarsely chopped
1 lb spaghetti
1/4 cup basil, chopped

Recipe Directions for Spaghetti with Olive & Pine Nut Tomato Sauce

  1. 1. Boil water for pasta

  2. 2. Toast pine nuts (3-5 min) then move to a plate to cool

  3. 3. Combine oil, garlic and red pepper over medium heat (2 min)

  4. 4. Add tomatoes and simmer 15 min until thickened

  5. 5. Add olives (3 min)

  6. 5. Cook pasta al dente

  7. 6. mix pasta, sauce, pine nuts and basil

  8. 7. top with parmesan (optional)
