Recipe Ingredients for Spaghetti olio e aglio

1/2 cup olive oil
3 garlic cloves, minced
1 lb spaghetti
3 tbsp fresh parsley, coarsely chopped

Recipe Directions for Spaghetti olio e aglio

  1. Heat the oil in a medium-size heavy-bottomed pan over a low heat. Add the garlic and a pinch of salt and cook, stirring constantly, until golden brown, then remove the pan from the heat. Do not let the garlic burn as it will taint the flavor of the oil.

  2. Meanwhile, bring a large pan of lightly salted water to a boil over a medium heat. Add the pasta and cook for about 2-3 minutes, or until done. Drain the pasta thoroughly and return to the pan.

  3. Add the oil and garlic mixture to the pasta and toss to coat thoroughly. Season with pepper to taste, add the chopped fresh parsley and toss to coat again.

  4. Transfer the pasta to a large, warmed serving dish and serve.
