Spaghetti Marinara Recipe

My husband wanted me to cook this for him. it is the first time i have ever attempted mussels. Looking forward to the challange. NOTE clean mussels and remove beards, peel and devain prawns, white fish use ling, barra or perch. You could use a premade marinara mix if you want ( my hubby is picky). i might add some scallops and squid to this one with the rest of the seafood.

Recipe Ingredients for spaghetti marinara

500 g spaghetti
2 tbsp olive oil
1 onion
2 cloves garlic
800 g canned egg tomatoes
1/2 cup white wine
1 tsp lemon zest
2 tsp caster sugar
500 g prawns
500 g whiting
600 g mussels
1/4 cup flat leaf parsley

Recipe Directions for spaghetti marinara

  1. cook pasta in a large saucepan until tender.

  2. drain, return to saucepan

  3. meanwhile heat oil in a large saucepan over medium high heat. Add onion and garlic. cook for three minutes. Add tomatoes, wine, lemon zest, sugar, and salt and pepper. stir untill well combined. Bring sauce to the boil. Reduce heat to medium. Simmer for 10 minutes.

  4. Add prawns/shrimp ( devained peeled tail intact pror to this) and fish to sauce. cook 2 minutes. add mussles in shells (cleaned and beards removed) Cover. cook for 1-2 minutes or untill mussels open (discard any unopened mussels).

  5. Divie pasta between 6 bowels. Spoon over marinara. Sprinkle with parsley serve.
