Recipe Ingredients for Spaghetti Frittata

1 1/4 cups Egg Beaters
5 egg whites
1 cooking spray
1 onion, sliced thinly into half moons
5 cups fresh spinach, washed, dried and coarsely chopped
1/4 cup sun dried tomatoes, reconstituted in boiling water for 10 minutes
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked whole wheat spaghetti
1/2 cup marinara sauce
1/3 cup Parmesan cheese, grated

Recipe Directions for Spaghetti Frittata

  1. Whisk eggs to combine. Set aside.

  2. Heat oil in large oven proof, nonstick skillet over a medium high heat. Add onion and cook, stirring occasionally, until the onion is softened, 3-5 minutes. Add spinach, sun-dried tomatoes, garlic, salt and pepper and cook until spinach is wilted, about 1 minute.

  3. Add pasta to the pan and stir to combine. Pour eggs evenly over pasta and vegetables. Lower heat to medium-low and cook for 6-8 minutes, until eggs are set on the edges but not in the middle.

  4. Preheat broiler. Sprinkle top of frittata with cheese and place under broiler. Cook until top is set and golden brown, 2-3 minutes. Be careful not to overcook or eggs will become tough. Cut into wedges and serve.
