Recipe Ingredients for Spaghetti Carbonara

225 g spaghetti
1 tsp olive oil
3 slices back bacon, diced
2 tbsp white wine or white wine vinegar
2 tbsp parmesan cheese, grated
1 egg
1 egg yolk
1 tsp butter

Recipe Directions for Spaghetti Carbonara

  1. Cook the spaghetti in plenty of boiling water

  2. Meanwhile heat the oil in a large non-stick frying pan. Fry the bacon until it begins to brown. Add the white wine and allow to reduce until about 1tbsp liquid is left in the pan. Put the butter in the pan and allow to melt then remove the pan from the heat.

  3. Mix the parmesan, egg and egg yolk together in a small bowl and season with pepper and nutmeg.

  4. When the spaghetti is cooked, drain it but not too well then put in the pan with the bacon. Stir the cover the spaghetti in the winey, bacony juices.

  5. Pour the egg and parmesan mixture over the top and stir really well until the cheese is melted and the spaghetti is evenly coated in sauce.

  6. Eat immediately, this cannot be reheated.
