From family cookbook - ok to use ff half and half - I also like to use Barilla plus spaghetti.

Recipe Ingredients for Spaghetti Carbonara

16 oz. spaghetti
1 tblsp olive oil
8 oz. bacon
1 onion
2 cloves garlic
1/4 cup half and half
1/4 cup white wine
4 large eggs
1/2 cup parmesan cheese

Recipe Directions for Spaghetti Carbonara

  1. In a bowl add eggs, cream, about half of the parmesan, a pinch of salt and lots of pepper. Beat with a fork until well mixed.

  2. In a large skillet, cook chopped bacon until crisp; remove and drain onto paper towels. Discard the bacon fat.

  3. In a large pot of boiling salted water, start the spaghetti.

  4. Add the olive oil to the skillet. Add chopped onion and garlic, and cook over medium heat until onion is translucent. Add wine if desired; cook a minute or so more, and then return cooked bacon to the skillet.

  5. Drain spaghetti well, but do not rinse. Pour hot spaghetti into the skillet and stir to flavor the pasta.

  6. Add the beaten egg mix to the spaghetti, tossing constantly with tongs or large fork. The hot spaghetti will cook the eggs. When cooked properly, the eggs should be barely set, not over or under cooked.

  7. Add the remaining parmesan cheese, and toss some more.

  8. Serve immediately with some chopped parsley sprinkled on top and extra parmesan cheese at the table.

  9. Timing and temperature are everything. When you get the routine down this dish takes only 15 minutes to make and comes out perfect every time.
