Spaghetti Carbonara Recipe

classic Roman pasta dish, you can use low fat sour cream if you prefer but try not to use a brand which is too acidic in flavour.

Recipe Ingredients for spaghetti carbonara

500 g whole wheat spaghetti
200 g sour cream
100 g lean bacon
2 tbs grated parmesan cheese
1 egg
1 pepper

Recipe Directions for spaghetti carbonara

put a pasta pot of salted water to boil. saute bacon in a pan large enough to accomodate 500g of cooked pasta. add sour cream and reduce heat, removing the pan completely from heat once the cream begins to bubble. crack an egg in a bowl large enough to accomodate 500g pasta. beat egg, grated parmesan and ground pepper together. once pasta is cooked and drained toss the hot pasta into thed bowl with the egg, pepper, parmesan mixture combining well. place the pan with bacon and sour cream back on a medium low heat and add pasta. mix well to distribute cream through out the pasta but do not leave on the heat long enough for the egg to curdle. serve immediately with more grated parmesan.
