A more or less traditional pasta carbonara using american bacon and Barilla Plus

Recipe Ingredients for Spaghetti Carbonara with Barilla Plus

1 box Barilla Plus spaghetti
12 ounces bacon, sliced into small strips
4 garlic cloves, finely chopped
2 large eggs
1 cup freshly grated Parmesan cheese
1 tsp Freshly ground black pepper
1/2 cup fresh basil, chopped
1/2 cup chopped onion
3/4 cup white wine (or chicken broth)

Recipe Directions for Spaghetti Carbonara with Barilla Plus

  1. Bring a large pot of salted water to a boil, add the pasta and cook according to package directions.

  2. Meanwhile, heat a large, deep skillet over medium heat. Add the bacon and saute until the bacon is crisp and the fat is rendered. Add the garlic and onion into the fat and saute till soft. Scoop out bacon mixture and drain well on paper towels. Discard excess bacon fat and deglaze pan with wine or chicken broth, scraping to remove all browned bits. Add bacon mixture back to pan and turn heat to low.

  3. When pasta is done drain well and add to the pan with the bacon mixture, tossing well to coat. Beat the eggs, basil and Parmesan together in a mixing bowl, stirring well. Remove the pan from the heat and pour the pasta and bacon mixture into the bowl, tossing quickly with two forks until the eggs thicken and the cheese is melted. Taste for salt. Serve with additional cheese.
