Recipe Ingredients for Spaghetti with Broccoli Pesto

14 1/2 oz. Ronzoni smart pasta
6 tbsp olive oil
4 cloves garlic, minced
2/3 c. shredded Parmesan cheese
5 cups broccoli florets
1 cup less sodium chicken broth

Recipe Directions for Spaghetti with Broccoli Pesto

  1. Cook pasta according to package directions.

  2. Heat olive oil in a non-stick pan over medium heat. Add garlic, sautee for 1-3 minutes.

  3. Add frozen broccoli florets. Toss around in oil for one minute. Add chicken stock. Cover and let simmer until broccoli can be mashed with a fork.

  4. In the pan, mash the broccoli with a fork until all of the liquid and broccoli has come together into a pesto type consistency.

  5. Toss warm pesto with spaghetti and parmesan cheese.
