Spaghetti Bolognese with wholewheat pasta and a naughty glass of wine

Recipe Ingredients for Spaghetti Bolognese

500 g Spaghetti, Whole-wheat, Cooked
3 tbsp olive oil
225 g smoked back bacon, finely diced
2 onions, finely diced
1 clove garlic, finely chopped
2 large carrots, finely diced
3 stalks celery, finely diced
500 g beef, minced, lean, steak
800 g tomatoes, tinned
2 tbsp tomato puree
250 ml red wine
1 tbsp bay leaf (or 1 bay leaf)
6 tbsp freshly grated Parmesan

Recipe Directions for Spaghetti Bolognese

  1. To make the bolognese sauce, heat the olive oil in a large saucepan over a medium heat. Add the bacon, onion, garlic, carrot and celery and fry for about 6 minutes or until tender.

  2. Stir in the minced beef and stir-fry until the beef is evenly brown and crumbly.

  3. Add the chopped tomatoes, tomato purée, wine, bay leaf.

  4. Lightly season with salt (the bacon is quite salty). Add pepper to taste.

  5. Return the mixture to the boil and simmer gently for an hour until it forms a thick, flavoursome sauce, then remove bay leaf.

  6. Just before you are ready to serve, drop the spaghetti into a pan of boiling, salted water.

  7. Cook according to packet instructions until al dente - about 10 minutes.

  8. Drain thoroughly and heap into a serving bowl.

  9. Toss well and serve with the sauce and Parmesan.
