Recipe Ingredients for Spaghetti Bolognaise

5 tomatoes
2 red peppers
2 carrots, grated
2 garlic cloves, peeled
250 ml red wine
1 tsp dried mixed herbs, for the tomato sauce
450 g minced beef
3 tomatoes, coarsely chopped
4 garlic cloves, coarsely chopped
2 tsp brown sugar
1 tbsp olive oil
2 red onions, coarsely chopped
1 tbsp honey, clear
3 courgettes, chopped
2 oz mushrooms, chopped
4 tbsp soy sauce
2 tbsp Worcestershire sauce
60 ml red wine, for the bolognaise

Recipe Directions for Spaghetti Bolognaise

  1. For the tomato sauce, put all the ingredients in a food processor and blitz until smooth. Pour into a pan, bring to the boil and simmer for 20 minutes.

  2. Meanwhile start on the bolognaise

  3. Dry fry the mince until brown, drain any fat, then add the chopped tomatoes, garlic, bay leaves, sugar and an optional pinch of dried herbs. Set aside.

  4. In another pan, heat the olive oil and cook the red onions until softened. Add the honey for the last two minutes and cook over a high heat until darkened. Remove the onions from the pan and set aside.

  5. In the same pan, add the courgettes, mushrooms, soy and Worcestershire sauce and cook until golden.

  6. Return the pan with the meat to the heat and add the browned onions, the courgette and mushroom mixture, and the tomato sauce. Stir in the red wine, bring to the boil and cook for 5 minutes.

  7. Serve with cooked spaghetti.
