Recipe Ingredients for Spaghetti with Artichokes and Broad Beans

100 grams Whole Wheat Penne
100 grams Artichoke Hearts Marinated
80 grams Broad Beans
50 grams Sun-Dried Tomatoes
50 grams Pesto with Basil

Recipe Directions for Spaghetti with Artichokes and Broad Beans

  1. Cook the spaghetti in a pan of salted boiling water for 10 minutes, or according to the pack instructions, until tender with a bite at the centre. Add the broad beans to the pan for the final 5 minutes of cooking.

  2. While the pasta is cooking, cut each artichoke heart into six pieces. Drain the pasta and beans, reserving about 50ml (quarter of a teacup) of the cooking liquid. Turn the pasta and beans into a warmed serving bowl. Add the artichoke hearts and chopped tomatoes.

  3. Combine the pesto with the reserved water and spoon over the pasta. Season with plenty of black pepper, then toss gently to combine all the ingredients. Serve immediately with a bowl of grated Parmesan cheese (don't forget to add the calories to your log).
