Healthy, vegan alfredo with spinach

Recipe Ingredients for Spaghetti alfredo

1 cup cashews
1/8 cup almond breeze
1/8 cup water
1/4 cup nutritional yeast
2 tbsp mustard
1 tsp lemon juice
1/2 t salt
240 g Spaghetti, Whole-wheat, Dry
4 c spinach

Recipe Directions for Spaghetti alfredo

  1. Soak cashews in warm water.

  2. Add spaghetti to a large pot of salted water that has come to a rolling boil. Cook for 7 minutes, or until al dente, and drain. Mix spinach into hot pasta and allow to wilt.

  3. Meanwhile, pulse first 7 ingredients in food processor until smooth.

  4. Mix sauce, pasta and spinach. Serve immediately.
