Enjoy the flavor of homemade noodles without the fuss of making traditional pasta. Though special equipment is made for making spaetzle, most home cooks already have what they need to make this tasty German dish in their kitchens. With a little improvisation, very basic ingredients, and just a few minutes, one can make delectable and authentic Bavarian dumplings. Spaetzle is delicious in Kaesespaetzle (something like a sophisticated macaroni and cheese), in beef stroganoff, or on its own as a tasty side dish.

Recipe Ingredients for Spaetzle

8 serving All-Purpose Flour
0.5 cup Milk, Nonfat, Fluid
4 extra large Egg, Whole
0.5 tsp Nutmeg, Ground
1 tsp Salt, Table

Recipe Directions for Spaetzle

  1. Mix the flour, milk, eggs, nutmeg, and salt in a bowl to make a thick batter. Use freshly grated nutmeg if possible; the flavor is much more intense and delicious.

  2. Bring a large pot of salted water to a boil.

  3. Form the spaetzle. A special spaetzle maker can be used?it looks something like a cheese grater with a receptacle to hold the batter before it gets pushed through the holes. But a special device is not necessary. One can also use a rubber spatula to push the batter through the holes of a large-holed colander or a kitchen spoon with holes. Push the spaetzle batter through the holes of whatever device is used directly into the boiling water.

  4. Don't overload the pot of water. Work in small batches, if necessary. The spaetzle batter will sink to the bottom of the pot of boiling water, then float to the top as it cooks. If the starchy water begins to boil over, turn down the heat slightly.

  5. Cook the spaetzle for approximately five minutes.

  6. Drain the spaetzle in a collander.

  7. Sautee the spaetzle in a large nonstick skillet with a few tablespoons of butter. Remove from heat when the butter coats the spaetzle and starts to brown. The Maillard reaction (browning) of the butter makes the flavor of the spaetzle more complex and interesting.
