Recipe Ingredients for Spaetzle with Kielbasa and Caramelized Onions

14 oz Kielbasa
1 medium raw Onion Red
2 tbsp Butter
1 tsp Salt, Table
0.5 tsp Pepper, Black
1 Teaspoon Thyme
2.25 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1.5 cup Milk, Lowfat, Fluid, 1% Milkfat
0.5 tsp Nutmeg, Ground
2 large Egg, Whole
1.5 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese

Recipe Directions for Spaetzle with Kielbasa and Caramelized Onions

  1. Brown kielbasa in skillet and transfer to plate.

  2. Melt butter in skillet, scraping up brown bits from the bottom of the pan.

  3. Add sliced onions to pan along with thyme.

  4. Cook on medium high for approx 5 min. Allow to "sweat" and turn slightly translucent.

  5. Turn heat down to low, add a dash of salt. Stir frequently until caramelized, 20-40 min.

  6. In a large pot, bring salted water to a boil.

  7. In a mixing bowl, combine flour, nutmeg, and tsp of salt.

  8. Whisk together milk and eggs and add to flour.

  9. Drop batter in small spoonfuls into pot of boiling water, working in batches. In 1-2 min. the spaetzle should float. Use a slotted spoon to remove and place on towel (I recommend fabric. Paper will stick) to dry.

  10. Mix kielbasa, cheese, caramelized onions, pepper, and spaetzle together and pour into casserole dish. Cook uncovered at 375 degrees for 25-30 min.
