Marie Catrib's of Grand Rapids inspired Sweet Potato Quinoa Burgers

Recipe Ingredients for SP Q Burg

2 cups cooked lentils
2 cups cooked quinoa
1 1/2 cups mashed sweet potato
2 cups diced sweet onion
2 cloves garlic
1 cup grated carrot
1 cup minced kale
1 cup steel cut oats
1/2 teaspoon cumin
1/2 teaspoon coriander
1 tablespoon curry powder
2 tablespoons Ketchup
2 tablespoons sriracha
6 tablespoons Chia Seed
1 teaspoon sea salt
1 teaspoon black pepper

Recipe Directions for SP Q Burg

  1. saute onion and garlic in olive oil

  2. mix onions and garlic w/lentils quinoa and sweet potatoes

  3. add rest of ingredients and a 1/4 cup water

  4. let rest for 30 mins

  5. should be a nice "dough"

  6. form patties, should yeild 20

  7. pan fry in olive oil

  8. serve with curry mayo and ginger ketchup
