Makes 16 small muffins. Great for low carb, low gi and high protein diets. They taste a bit like peanut butter.

Recipe Ingredients for Soya Muffins

160 g soya flour, full fat
100 g oat bran
75 g ground almonds
340 g soft silken tofu
2 large eggs
150 g apricots
6 tbsp Splenda
2 tsp baking powder
1 tsp cream or tartar
1 tsp baking soda
1 pinch of salt
1/2 tsp vanilla essence

Recipe Directions for Soya Muffins

  1. I use canned apricots in juice. If using fresh apricots, briefly stew or microwave them until soft.

  2. Put the apricots and silken tofu in a blender and mix until smooth. Add the eggs and vanilla essence.

  3. Mix the dry ingredients in a large bowl. Add the wet mixture and stir well. The batter should have a soft dropping consistency. If it is too stiff add a little apricot juice or water.

  4. For a lower cholesterol count use 4 egg whites instead of 2 eggs.
