Recipe Ingredients for Soya chunk and vegetable stew

2 1/2 ounces (70.875g) soya chunks
150 ml boiling water
0.18 oz (5g) bouillon - swiss vegetable, powder
3 oz carrots, sliced
3 oz parsnips, sliced
3 oz swede, cut into chunks
1 1/2 oz celery, sliced
1/2 medium onion, cut finely
3 oz mushrooms, sliced
4 oz red pepper
1 oz pearl barley
1/2 tablespoon worchestershire sauce
1/2 teaspoon mixed herbs
200 grams canned tomatoes, with juice
1/2 teaspoon bay leaf
1/2 tablespoon olive oil
5/8 pint boiling water
0.18 oz (5g) bouillon - swiss vegetable, powder
1 salt and pepper, season to taste
1 tablespoon potato flour, to thicken stew
2 tablespoons water, to thicken stew

Recipe Directions for Soya chunk and vegetable stew

  1. Re hydrate the chunks with 300ml vegetable stock.

  2. Heat oil in a large pan fry off the onion until soft, then fry off the fresh mushrooms, then add all your vegetables and place a lid on and lower the heat and sweat off the vegetables for 5 minutes adding a little stock if the mix becomes stuck or dry, once thats done highten the heat and add the worchestershire sauce and stir, now add the stock, mixed herbs and stir well and bring back up to temperature, then season to taste with salt and pepper. Add the rehydrated chunkes and the rest of the stock and stir well, add the bay leaf and the pearl barley and lower the heat to a simmer, simmer for 20 minutes, and then add dumplings to the stew if you like, if not continue simmer the stew for 20 minutes, or until veggies are tender and serve with mash millet or rice.
