Comfort food with a capital C but gorgous filling nutrisious and not as calorific as some shop bought ones.

Recipe Ingredients for soya chunk and mushroom suet pudding

5 ounces (141.75g) soya chunks
300 ml boiling water
0.18 oz (5g) bouillon - swiss vegetable, powder
1 large onion, chopped
2 garlic cloves, chopped
5 ounces mushroom, chopped
2 ounces carrot, chopped
2 ounces celery, chopped
1 pint boiling water
0.18 oz (5g) bouillon - swiss vegetable, powder
1 tablespoon mixed herbs
1 tablespoon worchestershire sauce
1/2 ounce bay leaf
400 grams canned tomatoes, chopped
1 tablespoon tomato puree
1 pepper, season to taste
16 ounces self raising flour, wholewheat
8 ounces shredded vegetable suet
2 teaspoon mixed herbs
6 tablespoons water

Recipe Directions for soya chunk and mushroom suet pudding

  1. Rehydrate soya protein with 300ml stock.

  2. Fry off the onion and garlic until soft but not brown, add the mushrooms , carots and celery saute for a further 4-5 minutes in the pan with the lid on.

  3. Now add the tomatoes, tomato puree, mixed herb soya chunks, lea perrins, pepper and 3/4 pint of the stock, cook slowly for

  4. 30-40 minutes, allow to cool.

  5. Make up the suet crust patry and divide into 2 equal parts. cut off 1/3 of each and put on one side. roll out the rest of the dough and line 2 one pint pudding basins fill equally with the cooled mixture, no rtoll out the reseved pastry cut to fit as lids, moisten the edge of the pastry in the pudding basins and crimp the lids onto them.

  6. cover with foil and greaseproof paper, steam for 20 minutes in a pressure cooker without its weight, put on the weight and cook for a further 20 minutes and 15lbs pressure and once cooked turn pudding out and serve immediately with seasonall veg and a rich gravy.
